Owner and operator Carlo Dan has spent the last 20 years gaining the knowledge and honing the skill set necessary to make his dream of owning a restaurant a reality. He has worked for a handful of restaurateurs, in multiple positions, from bus boy to General Manager and is a Summa Cum Laude graduate of the Culinary Arts program at the Art Institute of Washington. He is infatuated by food and beverage, and driven to host. Carlo and his wife Heather, have created an eclectic, seasonal, smoke driven menu that draws primarily from Sam’s southern heritage and Carlo’s Cuban roots.
